This is the best appetizer recipe for the fourth! It's super easy, doesn't require stove or oven, is super delicious and healthy!
I've made this recipe multiple times and it's always turned out wonderful! I recommend only keeping these in the fridge for a few hours before serving them because the cold temperatures turn tomatoes mushy!
Stuffed Cherry Tomatoes Appetizer
24 cherry tomatoes
8oz goat cheese, softened
1 TBS Parsley
1 TBS Basil
Cut a thin slice on the bottom of each tomato to make it stand, on the top cut about a quarter inch off. Take a spoon or small knife and cut around inside the tomato and scoop out the inside as much as possible.
Repeat with each tomato.
Combine goat cheese, pasley and basil and mix well.
Fill a ziplock bag with goat cheese, squeeze out air, and make a small cut
off one corner. Use the bag to pipe the filling into the tomatoes.
Garnish with salt, pepper and olive oil. Refrigerate for up to 2 hours.
Serve along side your favorite fourth of July appetizers!
